This tempura flour is made from rice flour made from finely ground rice from Gifu Prefecture, and uses potato starch and organic chikpi bean powder grown under contract from Hokkaido. Wheat and eggs are not used. Compared to our wheat-based tempura flour, the oil absorption of the batter is reduced by about 60%.
