Unlike most Japanese green teas which are steamed, Hojicha leaves are roasted over charcoal, which removes most of the caffeine and gives the tea a distinct reddish-brown colour. This process imparts a nutty, toasty, and slightly caramel-like flavour with very low bitterness, making it smooth and easy to drink. It's a comforting beverage that can be enjoyed throughout the day, from a morning pick-me-up to a relaxing evening cup, and is suitable for all ages. For the best flavour, steep the leaves in hot water (around 80°C) for about 30-60 seconds. Because of its low caffeine content, it is a popular choice in Japan for serving to children and the elderly, often enjoyed after the evening meal or before bed.
