This is 100% made with sweet potatoes, but for this shochu the only ingredient is red sweet potatoes.
Brewed entirely with red sweet potatoes (aka-imo), a portion of which are skillfully cultured with a special mold to enable fermentation (aka-imo koji), this smooth shochu delivers the delicate sweetness and rich aroma that only aka-imo koji can produce.
