Buckwheat noodles are noodles made by mixing wheat flour and buckwheat flour. It is very popular in Japan and can be eaten in two different ways. Kakesoba, or cold soba noodles, which are dipped in a hot broth, are served in a bamboo bowl and dipped in a sauce called zaru soba.
