Wadakan Hakkoda Mirin Type is a Japanese sweet cooking seasoning, brewed with 100% Japanese rice and spring water from the Hakkoda mountains in Aomori. It is a mirin-type (みりんタイプ) seasoning: salt is added during brewing, which is what distinguishes it from hon mirin.

Use it in teriyaki, simmered dishes, marinades and glazes. It gives a glossy finish and a rounded sweetness that balances the saltiness of soy sauce. Add it early so the alcohol cooks off.
