Cheonilyeom (천일염), known as Korean solar salt, is a type of coarse sea salt harvested from Korean tidal flats. It is naturally dried by the sun and wind, which results in a lower sodium content and a richer, more complex mineral flavour compared to refined table salt. The large, irregular crystals dissolve slowly, making this salt an essential ingredient for brining vegetables when making traditional kimchi, as it draws out water without making the cabbage overly salty. It is also excellent for seasoning soups, stews (jjigae), and broths, or for creating a salt crust on grilled fish and meat. For authentic Korean cooking, especially kimchi making, this unrefined solar salt provides the characteristic taste and texture that processed salts cannot replicate.
