Gochu-mat-gireum (고추맛기름), or Korean red pepper oil, is an aromatic cooking oil infused with the flavour of Korean red chillies. This oil from Otogi carries a rich, smoky fragrance and a mild, warming heat, distinct from the sharper spice of other chilli oils. It is made by slowly heating gochugaru (Korean chilli flakes) in oil to extract their deep red colour and savoury flavour without scorching them. Use it as a base for stir-fries, to add a flavourful kick to the Korean-Chinese noodle dish jjajangmyeon, or to create a dipping sauce for dumplings and pancakes. A drizzle over soft tofu (sundubu) or into a soup just before serving adds a beautiful colour and a layer of complex, savoury warmth.
