Somyeon (์๋ฉด) are very thin Korean wheat flour noodles, essential for a variety of classic dishes. These noodles have a smooth, soft, and slightly chewy texture once cooked, making them excellent at absorbing the flavours of broths and sauces. They are most famously used in warm noodle soups like Janchi-guksu (์์น๊ตญ์), a comforting anchovy broth soup, or served cold in spicy mixed noodle dishes like Bibim-guksu (๋น๋น๊ตญ์).
