Sikhye is a sweet traditional Korean drink made from fermented rice and malt. As the rice ferments, the grains turns white becomes spongy, releases a starch and turns into light amber color. It is usually served cold as a slush or right after boiling it as a tea.
Sikhye contains dietary fiber and anti-oxidants that helps to aid digestion. That’s why it is commonly served during big feasts in Korea like New Year’s Day and Korean Harvest Festival.
